The Oyster & Thistle is Thomas and Danielle’s latest work of passion. With the years spent honing their oyster skills on Chuckanut Drive they bring to La Conner an amazing from scratch approach.
Thomas and Danielle met in Alaska during the 80’s and began their search for the perfect region to offer their brand of excellence. While living in Seattle they discovered Skagit Valley to be just that place, where the resource of ingredients were plentiful and diverse. In ’91 they opened their first restaurant and have spent every year since growing their repertoire and honing the quality of service.
The Oyster & Thistle Restaurant and Pub with its quaintness of an old English country inn, reflects the regions unequaled supply of oysters and other fresh ingredients.
